Grilled Kale

Yield: Serves 4

1 large bunch kale, stems removed

2 tablespoons olive oil

1/4 teaspoon salt

1. Preheat grill to medium heat.

2. Toss the kale with the olive oil and salt.

3. Arrange the kale in a single layer on the grill. Close the cover and cook for 1–2 minutes. Use tongs to carefully turn the leaves of kale.

4. Close the cover again and cook for another 2 minutes. The kale is done when it is no longer limp and the edges are crisp. Larger pieces may need additional time. Remove from the grill and serve immediately.
