2 tablespoons olive oil
8 ounces sweet Italian sausage, casings removed
8 ounces Brussels sprouts, trimmed and halved
3 cloves garlic, minced
1 pound fresh gnocchi
1/2 cup white wine
1 cup chicken broth
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup shredded Parmesan cheese
1. Heat oil in a large skillet over medium heat. Add sausage and use spoon to break sausage up as it cooks. Sauté until sausage begins to brown and is cooked through, about 10 minutes.
2. Add Brussels sprouts and continue to cook until sprouts also begin to soften, about 5 minutes. Add garlic and cook 1 minute more.
3. Add gnocchi to pan (do not precook it). Cook 2–3 minutes until gnocchi begins to soften slightly and brown.
4. Add wine, then cook 2 minutes. Add broth, salt, and pepper. Bring to a full boil. Remove from heat and add cheese. Stir until cheese melts and serve hot.
