1 pound ground lamb
1/2 cup dry bread crumbs
2 tablespoons finely chopped onion
2 tablespoons chopped fresh parsley
1 clove garlic, peeled and crushed
1 teaspoon dried mint
3/4 cup diced feta cheese
1. Preheat the broiler, lightly grease the rack or spray with cooking oil, and adjust the rack to 51/2"–6" from the heating element.
2. Combine all ingredients, except the feta, mixing well. Divide the mixture into 6 portions and shape into 4" balls. Push one-sixth of the feta into the center of each ball and flatten into 4" patties.
3. Place on the rack of broiler pan and broil 4–5 minutes per side, turning once, or to desired doneness.
