4 medium ripe plantains
Nonstick cooking spray
1/2 cup orange juice
1 teaspoon cinnamon
3 tablespoons brown sugar
1. Preheat oven to 350°F. Spray baking pan with nonstick cooking spray.
2. Slice each plantain in half. Place plantains flat in a shallow baking dish.
3. Pour orange juice over plantains. Sprinkle with cinnamon and sugar.
4. Spray the top of the plantains again with cooking spray. Bake for 20 minutes or until tender.
