4 small eggplants, sliced lengthwise into 1/8" pieces
4 cloves garlic, minced
1 tablespoon olive oil
2 teaspoons salt, divided
1/2 teaspoon ground black pepper
1. Preheat broiler.
2. Toss all ingredients, except 1 teaspoon salt, together in a large bowl. Place eggplant slices on a broiler pan or baking sheet.
3. Broil 5 minutes per side until golden brown outside and soft inside. Season with remaining salt.
