1 (8-ounce) cup heavy whipping cream

1 tablespoon confectioners’ sugar

1 teaspoon vanilla extract

1/3 cup pineapple juice from canned pineapple

2 (14-ounce) cans mandarin oranges, drained

1 (15-ounce) can crushed pineapple, drained, reserving juice

1 cup shredded coconut

1/2 cup chopped pecans

1/8 teaspoon ground cinnamon

1. In the bowl of a stand mixer fitted with whisk attachment, add whipping cream, confectioners’ sugar, and vanilla. Beat until soft peaks form. Beat in pineapple juice. Fold in oranges, pineapple, coconut, and pecans.

2. Transfer to a serving bowl and sprinkle with cinnamon.

3. Cover and chill for 15 minutes before serving.
