Sofia’s Sundae Best Recipe

Back when I was a teen, I used to go to the Zara St Ice Creamery in Newcastle near the beach, after Carols By Candlelight with my best friend, and then again after uni, for an ice cream. Each was topped with whipped cream and a choice of chocolate or caramel hot fudge sauce. And twenty years later, I still make my sundaes this way, remembering that ice creamery that is sadly long gone.

Ben’s sundae dreaming is based on the vague beach memory of my uni days and the tropical town in far north Queensland where my uncle moored his catamaran years ago. So here is Ben’s recommendation for a Sundae—but don’t forget to leave room for those extras that might go on the side.

Ingredients

~Your fave ice cream flavor—two scoops, or three?

~Your syrup—it really depends on your finishing touches (you can skip ahead here) but a fruit sauce—passionfruit, strawberry, or Sofia’s favorite, raspberry—can be best.

~Your topping—for this one, Ben recommends you go with the nuts, a giant freckle, skittles, marshmallows, or whatever cooks your proverbial noodle best—because there’s that little bit of extra coming along.

~Top it all off with hot caramel fudge sauce or hot chocolate fudge sauce, and fresh whipped cream, and a cherry.

Hot Fudge Sauce—salted caramel

2 tbsp maple syrup/golden syrup/molasses to taste

2 tbsp light brown sugar

1tspn vanilla extract

2 pinches sea salt plus extra to scatter

2 tbsp butter

Hot Fudge Sauce—chocolate

2 tbsp maple syrup/golden syrup/molasses to taste

2 tbsp light brown sugar

1tspn vanilla extract

2 pinches sea salt

2 tbsp butter

1 cup, rounded over the rim of dark choc (or milk choc, to taste) melted in the butter

Combine ingredients in a bowl and cook on high in the microwave, stirring frequently. Sauce is ready when it coats the back of a spoon thickly. Can also be cooked on a stove top with frequent stirring.

A note on chocolate: salt the bowl and ensure no water gets into it from your implements.

Use whichever flavoring combo works best for you in this dessert and top with cherries, banana, mango, or strawberries to taste. We use what’s in season and buy a farm door box to make new desserts and sweet mains.
