DANA SWEET’S STRAWBERRY CREAM CUPCAKE RECIPE
Fresh Strawberry Cupcakes with Strawberry Whipped Cream Frosting
Prep Time: Approximately 30 minutes
Total Time: Approximately 60 minutes
Yields: 12 cupcakes
Ingredients:
1 cup of fresh (or frozen strawberries) approximately 10-12 strawberries ***should yield approx. 1 cup of pureed strawberries when blended (use ¾ cup for the cake mixture, then ¼ cup for the frosting)
1 ½ cups of all purpose flour
1 ¾ teaspoon of baking powder
½ teaspoon of salt
1 cup of softened butter or margarine
1 ¼ cup of sugar
2 large eggs
1 ½ teaspoon of vanilla extract
½ cup of almond milk (vanilla flavor)
Frosting:
1 ½ cups of heavy whipped cream
¼ cup of strawberry pureed ***(see above and use from the left over pureed strawberries from the cake mixture).
3 tablespoons of granulated sugar
1 ½ teaspoons of vanilla extract
