Chapter 5: Make Ahead Lunch Time Meals

 

Fruity Greek Yogurt

 

Makes 8 Servings

 

Just like making bread, you can start your own yogurt by using a store bought container of all natural plain Greek yogurt. After making one batch, you'll have your own starter for future batches. Have plenty of small serving size cups with lids, on hand, to refrigerate. You might want to double the quantities once your family tries this fruity, nutritional treat.

 

4 cups milk

¼ cup starter yogurt (all natural regular plain or Greek yogurt)

INSTRUCTIONS:

 

Add milk to crock pot and set on low heat for 2 ½ to 3 hours.

 

Turn off the unit and allow to stand for 3 hours, undisturbed. After 3 hours, dip out 1 cup of the milk and pour into a bowl. Mix together with the yogurt and return all to the crock pot. Do not turn the crock pot on but cover with a large towel to form an insulating blanket around the unit. Allow to set for 8 hours.

 

Remove ½ cup of the mixture as your next starter, seal and store.

 

Pour the yogurt over cheesecloth to remove excess liquid, then add the fruit of your choice. Blend well and spoon into individual containers.
