Classic Oxtail Soup

If you have never experienced the taste of oxtail soup, you are missing a special treat. There is no way to describe the taste of oxtail, except to say that it is the best beef you have ever had. Try this classic recipe that combines flavor-rich oxtail meat with spices and vegetables. Lentils or beans can also be used.

 

INGREDIENTS:

 

4 pounds disjointed oxtails

3 TBSP olive oil

2 onions, chopped

2 garlic cloves, minced

1 TBSP flour

2 cups beef stock

1 cup tomato sauce

6 peppercorns

½ teaspoon oregano

1 red chili pepper, seeded and chopped

2 cloves

2 carrots, chopped

1 red bell pepper, chopped

1 TBSP parsley, chopped

2 potatoes, cut into chucks

salt and pepper

 

INSTRUCTIONS:

 

Using a large skillet, warm the olive oil and add the oxtails. Brown on all sides over medium-high heat. Add the garlic and onion and cook for 5 minutes. Sprinkle the flour over the meat and stir all for 2 minutes. Turn off the stove.

 

In the crock pot, add the potatoes in the bottom and add the meat and drippings. Next, add the carrots, then the remaining ingredients.

 

Cover and cook on low for 9 to 11 hours.

 

Remove meat and vegetables with a slotted spoon and pour the soup on top. Serve with homemade bread.
