Spinach and Parmesan Portobellos

1 cup spinach

1 teaspoon garlic

1 teaspoon melted coconut oil

2 tablespoons parmesan cheese

3 tablespoons organic marinara sauce

1 tablespoon low fat Greek yogurt

2 portobello mushrooms

       1.    Clean mushrooms and remove stems.

       2.    Brush mushrooms with oil on both sides.

       3.    Finely chop mushrooms stems, and saute for 2-3 minutes in a large skillet.

       4.    Add garlic and allow to cook for another couple of minutes.

       5.    Add spinach to the pan, a handful at a time.

       6.    Once the spinach is wilted, remove from the heat, stir in yogurt.

       7.    Preheat oven to 400°F.

       8.    Place oiled mushrooms on baking sheet, then spoon marinara sauce inside.

       9.    Spoon spinach mixture over marinara and top with parmesan cheese .

       10.  Bake for 10-12 minutes, or until mushrooms are tender.

       11.  Broil for the last two minutes, or until cheese is melted and golden brown.

       12.  Let them rest for a couple of minutes, then serve warm!
