Hollywood Beet Salad

Serves 1

2 ounces boneless, skinless chicken breast

Coarse salt and freshly ground pepper

1 teaspoon olive oil

2 cups chopped kale

1 teaspoon red-wine vinegar

1 tablespoon fresh lemon juice

1/2 cup red beets, grated

1 ounce mild goat cheese

       1.    Season chicken with salt and pepper.

       2.    Heat oil in pan on medium heat.

       3.    Cook chicken on both sides until cooked through, 3 to 4 minutes per side.

       4.    Place kale and sliced chicken in a large bowl.

       5.    Drizzle vinegar and lemon juice, then season with salt and pepper.

       6.    Top with beets and goat cheese, and toss.

       7.    Serve and Enjoy!
