Zucchini Basil Fresca

2 large zucchinis

1 cup basil

2 garlic cloves

1 Brazil nut

1 tablespoon extra-virgin olive oil

2 tablespoons fresh lemon juice

1/4 cup Parmesan cheese, freshly grated

Salt and pepper, to taste

1 cup cherry tomatoes

       1.    Spiralize the zucchinis into noodles.

       2.    Combine the basil, garlic and Brazil nut in a food processor and pulse until coarsely chopped.

       3.    Slowly add the olive oil in a constant stream while the food processor is on.

       4.    Stop the machine and scrape down the sides of the food processor with a rubber spatula.

       5.    Add the lemon juice and Parmesan cheese. Pulse until blended.

       6.    Season with salt and pepper.

       7.    Heat the zucchini noodles in a pan over medium heat for 2-5 minutes.

       8.    Plate the zucchini and add pesto and the cherry tomatoes.

       9.    Enjoy!
