GUAVA CREAM CHEESE–STUFFED BANANA MUFFINS
MAKES 12 MUFFINS (5 MG THC PER MUFFIN)
ENHANCED MUFFINS are a great pack-ahead and go option for a hike, a picnic, or any place where a portable spiked treat might be welcome (long train ride? all-day concert?). These have some banana for fiber and complex carbs in the form of white whole wheat flour for slow-burning energy. (For an even more nutritious muffin, use all white whole wheat flour—the muffins will be a little heartier.) They are topped with crunchy granola, but the real magic is in the gooey guava–cream cheese filling made using guava paste; it’s such a tasty surprise when you bite in (see here for more about guava paste). The granola topping adds extra crunch and deliciousness.
GRANOLA TOPPING
½ cup granola
¼ cup all-purpose flour
¼ cup packed dark brown sugar
¼ teaspoon fine sea salt
3 tablespoons coconut oil
MUFFINS
2 large cage-free eggs
⅔ cup packed dark brown sugar
½ cup 2% plain Greek yogurt
2 tablespoons CannaOil (preferably made with coconut oil)
2 very ripe bananas, mashed
1 cup all-purpose flour
1 cup white whole wheat flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon fine sea salt
¾ cup cream cheese
¾ cup guava paste
- MAKE THE GRANOLA TOPPING: Mix together the granola, flour, brown sugar, and salt in a medium bowl. Add the coconut oil and use your fingers to rub everything together.
- MAKE THE MUFFINS: Preheat the oven to 350°F. Lightly coat 12 cups of a muffin tin with cooking spray or line with paper muffin liners.
- Whisk together the eggs, brown sugar, yogurt, CannaOil, and bananas in a large bowl. Set a large sieve over the bowl and add the flours, baking powder, cinnamon, and salt. Sift the dry ingredients over the wet, then use a rubber spatula to fold the mixture together.
- Fill each muffin cup half full with batter. Add a tablespoon of the cream cheese and top with a tablespoon of the guava paste. Sprinkle the muffins with the granola topping.
- Bake the muffins until they resist pressure when lightly pressed, 20 to 25 minutes (a cake tester doesn’t work so well in this case since the muffins are stuffed with cream cheese). Remove from the oven and cool for 10 minutes in the pan. Transfer the muffins to a wire rack to cool completely before serving.
Waste not want not, right? When grinding dried flower and bud, sometimes an off-white crystalline powder can fall off—this is good stuff—it’s called kief, or more properly, the “trichomes.” This is where the THC, CBD, and other cannabinoids are found. Invest in a multi-chamber hand grinder that has a screened catchment area at the bottom and collect the kief to sprinkle over cereal or granola, add to juice or coffee . . . or really anything. Kief is also what is used to make hash . . . but you need a lot of kief to do that! Saving pinches to add to a dish is a smart way to avoid wasting any precious part of the Herb.
