When I am dying for something sweet and I don’t want to give into my son’s stash of Halloween candy hidden underneath his bathroom sink behind the extra towels, I split open a soft, sticky date and stuff it with creamy nut butter, crunchy cacao nibs, and a pinch of flaky salt. A stuffed date is a quick fix that leaves me both satisfied and feeling somewhat virtuous.
4 medium-size dates, pitted and split open slightly
4 teaspoons nut or seed butter, or 8 shelled nuts*
4 teaspoons raw cacao nibs or DF dark chocolate chips
Pinch of sea salt or flaky sea salt, if your nut butter is unsalted
1. Stuff each date with nut butter (or two shelled nuts) and chocolate chips. Top with a pinch of salt, if desired, and enjoy.
ASK PAMELA: Should I store dates in the refrigerator? If you are not going to eat your dates within a week or if they are particularly sticky, yes, you’ll want to store them in the refrigerator. If you need to dice dates for a salad or porridge, for example, they’ll actually be easier to cut cold.
