Strawberry-Watermelon Ice Pops

MAKES 6 (3-OUNCE) ICE POPS · VEGETARIAN, GF, DF

Don’t be duped by ice pop boxes with beautiful pictures of real fruit on them. You would be shocked to learn how much sugar, high-fructose corn syrup, and artificial colors and flavors are added to these simple frozen treats. Fortunately, ice pops are incredibly easy to make and you can control the ingredients. These are a favorite in my house, but you can actually freeze any blend of fruit and juice or even your favorite smoothie in an ice pop mold.

2 cups whole hulled fresh or frozen strawberries

1½ cups fresh watermelon chunks

Juice of ½ lime (about 1 tablespoon)

1 tablespoon honey, plus more if desired

1. Place all the ingredients in a blender and process until smooth; taste and add more honey, if desired.

2. Pour into ice pop molds and add sticks, leaving at least 3 inches out of the mixture. Freeze until solid, at least 2 hours. Running tepid water over the outside of the molds can help release the pops easily.

TIPS: Look for molds that are made from stainless steel or silicone, both of which do not leach toxins into your food. At the very least, seek out BPA-free plastic molds.

No ice pop molds? No problem: you can use small disposable cups instead.
