Taco Seasoning

MAKES ENOUGH FOR 1 POUND OF GROUND MEAT OR CRUMBLED TEMPEH · VEGAN, GF, DF

There is no need to buy prepared taco seasoning, many of which contain MSG, sugar, and (not natural) flavors. It is cheaper and perfectly simple to make your own. I mix up ten times the amount of this taco seasoning so I always have it on hand for a really quick dinner.

1 tablespoon chili powder

2 teaspoons ground cumin

½ teaspoon paprika

¼ teaspoon ground turmeric

¼ teaspoon garlic powder

¼ teaspoon onion powder

¼ teaspoon dried oregano

¾ to 1 teaspoon fine sea salt

1. Mix all the ingredients together until well blended. This will keep in a glass jar for several months.

Accompaniments: corn tortillas, guacamole, pico de gallo, shredded cheese, refried black beans, cilantro-lime slaw, shredded lettuce

1. Dissolve the arrowroot powder in ¾ cup of water (for meat) or 1 cup of water (for tempeh) and set aside.

2. Heat a medium-size skillet over medium heat. Place the meat or tempeh in the skillet and cook until browned. Add the spice mixture and sauté for 30 seconds. Whisk arrowroot mixture and pour into the skillet. Sauté until thickened.

TIP: Not all chili powders are created equal. The one I use is by Simply Organic, which has good depth of flavor with a little kick. If you don’t care for any heat at all, you can cut back on the chili powder. If you like things spicy, feel free to add a few pinches of cayenne pepper.
