Coconut Milk

MAKES ABOUT 3 CUPS · VEGAN, GF, DF

I had no idea how easy it was to make homemade coconut milk! So easy! Plus, there aren’t added thickeners, sweeteners, and other junk that can be in packaged coconut milks. Coconut milk is a delicious dairy-free substitute in almost any recipe. I love it in smoothies and smoothie bowls, mixed with almond milk in porridges, combined with water to make coconut rice, in curry, and many other recipes.

2 cups unsweetened shredded coconut

4 cups warm water

1. Place the coconut in a Vitamix or blender and add the warm water.

2. Blend until it has a thick and creamy consistency.

3. Strain the mixture through a fine-mesh sieve or a nut milk bag.

4. Store in the fridge for up to 4 days. It is normal for the cream of the coconut to separate, just shake before drinking.
