Some jerk once said, “You don’t win friends with salad.” They obviously don’t know me, or what they’re talking about. A salad is not an afterthought; it’s the main event in a plant-based diet. Salads present infinite possibilities of texture, color, and flavor combinations. Plus, nobody ever got fat from eating too many salads.
When it comes to the definition of a salad, I’m not a stickler. A salad can be the traditional bowl of leafy greens and creamy dressing, crudely chopped vegetables with a squeeze of lemon, mounds of babaganoush and tzatziki with fresh crudités, spiralized raw “noodles”—just about anything comprised mostly of vegetables and fruit. As long as it doesn’t involve Iceberg lettuce. Iceberg is a human rights violation as far as I’m concerned, and has no business on your plate.
