TOASTED PITA AND SESAME SEED SALAD WITH DRIED FRUIT

I’m a huge fan of dried fruit, and you should be, too. I sometimes fantasize about going to the Dried Fruit Association’s yearly convention like a cosplayer. I’d dress up like a California Raisin and get my picture taken with the titans of the dried fruit industry. The rest of the world may still call them prunes, but I was really into that “Plum Amazin” rebranding. I might have been the only one.

 

1 pita, toasted until crispy as a chip and broken into pieces

2 hearts of romaine, chopped

1 large cucumber, sliced

4 radishes, sliced

½ cup pitted green olives

2 scallions, thinly sliced

½ cup sunflower seeds, toasted in the oven at 350°F for 10 minutes

¼ cup golden raisins

4 dried figs, diced

Juice of 1 lemon

Splash of good olive oil

Kosher salt and ground black pepper

1. Combine all the ingredients in a large bowl and toss.

2. Taste and adjust the seasoning if needed.
