CITRUS OLIVE OIL CAKE

This is the perfect dessert for people who aren’t into overly sweet treats. It’s great after dinner with an espresso, or in the morning with a cappuccino. Maybe it sounds a little weird to you, but by this point in the book you should trust me.

 

5 large eggs

½ teaspoon pure vanilla extract

Finely grated zest of 2 (normal size) oranges

1½ cups sugar

2 cups really good olive oil

1½ cups all-purpose flour

2 tablespoons cornstarch

Pinch of kosher salt

1 teaspoon baking powder

1. Preheat the oven to 350°F. Grease an 8-inch cake pan with olive oil.

2. Combine the eggs, vanilla, orange zest, sugar, and olive oil in a mixing bowl and whisk together until combined. (A hand mixer would be nice here.)

3. In a separate bowl, mix the dry ingredients together and add them to the wet ingredients. Whisk the hell out of it until you have a smooth batter.

4. Pour the batter into the prepared pan, and bake the cake for 35 minutes or so.

5. Check it with a toothpick in the center. If it comes out clean, you’re done. If not, give it 5 minutes more.

6. Remove from the oven and let it cool. Serve warm or at room temperature.
