PEANUT BUTTER–BERRY OATMEAL MUFFINS

A delicious, portable protein-powered breakfast or snack for around 100 calories without all the preservatives of a protein bar. Yeah, it’s pretty awesome.

 

Cooking spray

1 cup unsweetened applesauce

4 packets Stevia (or your favorite sweetener)

1 teaspoon pure vanilla extract

2 tablespoons PB2 (this brand of peanut butter powder is great for using in smoothies, sauces, and oat muffins)

2 cups water

2 tablespoons flaxseeds

2½ cups quick-cooking rolled oats (the old-fashioned 5-minute kind)

2 cups raspberries (or any kind of berry)

1. Preheat the oven to 400°F. Grease a muffin pan.

2. In a large mixing bowl, combine the applesauce, sweetener, vanilla, peanut butter powder, water, flaxseeds, oats, and berries. Stir well and let sit for 5 minutes.

3. Using a spoon, fill each of the cups with the mixture.

4. Place in the oven and bake for 30 minutes.

TRY THE TIP: Dust your berries with a little bit of flour before adding, so they don’t just sink to the bottom of the muffin like they’re wearing cement shoes.
