MOZZARELLA, STRAWBERRY JAM, AND BASIL PANINI

Salty, sweet, and melted-cheesy, served on toast with fresh basil. You deserve better than Pop-Tarts, even if you are stoned.

 

8 slices thick country white bread

8 ounces fresh mozzarella cheese, sliced

Strawberry jam

16 fresh basil leaves

Kosher salt

Cooking spray

1. Set a grill pan over medium heat.

2. Take 4 slices of bread and layer mozzarella cheese over them. Salt liberally, with more salt than you’d normally use. Trust me.

3. Cover the other 4 slices with the strawberry jam, and lay the basil slices on top.

4. Make sandwiches with one of each. Spray the pan with cooking spray and grill each side, pressing down with a panini press or a spatula for 2 to 3 minutes per side until the bread is golden brown and the cheese has melted.
