INGREDIENTS
3 small Gala apples, cored and chopped
Juice of ½ small lemon
⅓ cup (75 mL) whole rolled oats
⅓ cup (75 mL) chopped walnuts
¼ cup (60 mL) spelt or whole wheat flour
⅓ cup (75 mL) brown sugar
½ teaspoon (2 mL) cinnamon
¼ teaspoon (1 mL) ground cardamom
¼ teaspoon (1 mL) salt
3 tablespoons (45 mL) butter or hardened coconut oil
¼ cup (60 mL) dried tart cherries or cranberries (optional)
DIRECTIONS
Preheat the oven to 375°F (190°C). Brush the bottoms of four small ramekins with coconut oil.
In a medium bowl, toss the chopped apples with the lemon juice.
In a small bowl, mix together the oats, walnuts, flour, brown sugar, cinnamon, cardamom, and salt.
Cut the butter or hardened coconut oil into a few small pieces. Using your hands, work the butter into the flour mixture until well combined but still crumbly.
Mix the apples and dried tart cherries, if using, with half of the crumble mixture and divide evenly into 4 small ramekins. Sprinkle the rest of the crumble on top of each one.
Bake for 35 minutes, or until the apples are soft and the crumble is golden brown.
Let sit for 15 to 20 minutes before serving. Serve with scoops of ice cream.
TIP:
This is also delicious with pears, peaches, or mixed berries. Bake time will vary depending on the fruit.
SERVES: 4
VEGAN: Use coconut oil.
GLUTEN-FREE: Use oat flour in place of spelt or whole wheat.
