INGREDIENTS
DRESSING
2 tablespoons (30 mL) extra-virgin olive oil
2 tablespoons (30 mL) apple cider vinegar
1 garlic clove, minced
¼ teaspoon (1 mL) maple syrup
Sea salt and freshly ground black pepper
2 cups (500 mL) cooked farro
1 small watermelon radish, thinly sliced and chopped
⅓ cup (75 mL) dried tart cherries or cranberries
¼ cup (60 mL) crushed walnuts
⅓ cup (75 mL) crumbled feta cheese
2 cups (500 mL) watercress or arugula
1 cup (250 mL) basil leaves, torn
½ cup (125 mL) mint leaves
Sea salt and freshly ground black pepper
DIRECTIONS
Make the dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, garlic, maple syrup, and pinches of salt and pepper.
Toss the cooked farro with the radish slices, tart cherries, walnuts, feta cheese, and dressing. Add the watercress, basil, and mint and gently toss again. Season with salt and pepper to taste.
