BLISTERED PADRÓN PEPPERS

These peppers are generally mild in flavor, but “they” say every 1 in 10 peppers is a spicy one. The fun of eating these is that it’s a game of hot-pepper roulette!

INGREDIENTS

2 cups (500 mL) padrón peppers (or shishito peppers)

Toasted sesame oil, for drizzling

Sea salt

1 teaspoon (5 mL) sesame seeds

DIRECTIONS

Preheat a 10-inch (25-cm) or larger cast-iron skillet under the broiler, or at your oven’s highest temperature.

Once the skillet is hot, use a pot holder to remove it from the oven.

Place the peppers on the dry skillet and roast for 20 to 25 minutes, flipping halfway through, until golden brown.

Remove the peppers from the oven, transfer to a plate, and drizzle with sesame oil. Add a pinch of salt and sprinkle with the sesame seeds.
