Monday Morning Breakfast Burrito

DAPHNE: Lisa is a lean, mean, cooking machine, and as a two-time winner of “Chew Tank,” she’s an old pro. After a fun-filled weekend of crafting and maybe a little drinking with the girls, Lisa likes to start the week off right with her Monday Morning Breakfast Burrito. With tons of spicy chorizo and fresh veggies, this power breakfast fills you up but won’t weigh you down. Lisa even makes these delicious burritos ahead of time, wrapping them in foil and storing them in the fridge. When it’s time for breakfast, she just heats them up in a skillet or toaster oven, and boom, breakfast is ready!

Cooking spray

¼ cup poblano peppers, about half a pepper

¼ cup red bell peppers, about half a pepper

½ tomato, diced

½ cup spinach

1 link fresh chorizo, cooked through, cut into bite-size pieces

Kosher salt and ground black pepper, to taste

3 eggs

1 egg white

¼ cup Mexican 3-cheese blend

1 flour tortilla (12–14 inch), warmed

3 tablespoons black beans (canned), drained and rinsed

3 tablespoons salsa (fresh or jarred)

¼ avocado, sliced (optional)

1 teaspoon chopped cilantro (optional)

1. Grill the peppers by placing on a grill or grill pan over medium high heat and cooking until blistered on the outside, about 10 minutes. Place in a bowl, covered with plastic to steam until cool enough to touch. Peel off the skin of the peppers and remove the seeds and the stems. Dice and set aside.

2. Spray a nonstick pan with cooking spray. Place over medium-low heat. Add the peppers, tomatoes, spinach, and cooked chorizo to the pan. Season with salt and pepper, to taste. Cook meat and vegetables until warmed through, and tender, about 5 minutes.

3. Add the eggs and cheese to a medium bowl. Season with salt and pepper and whisk to combine. Add the egg mixture to the pan. Cook, stirring frequently, until the eggs are cooked through and scrambled.

4. Add the egg-vegetable mixture to a warm tortilla.

5. In a small bowl, combine the black beans and salsa. Top egg mixture with the bean-salsa mixture. Add avocado and cilantro if desired. Wrap tortilla into a burrito and enjoy!
