Chocolate Pancake Sandwich

MICHAEL: When I imagined Alana’s recipe for chocolate pancake sandwiches, I thought, sure, two pancakes with some chocolate in the middle, no big deal. I was wrong; it’s a huge deal! Alana introduced me to her sandwich grill that takes basic pancake batter to a whole new level. These beautiful little pockets are no ordinary pancakes, my friends. They are stuffed with chocolate chips and baked into these heavenly little pillows. And when you bite into them, all of the melted chocolate just oozes out. I get excited just thinking about it and all of the possible flavor combinations: chocolate-hazelnut, strawberry jam, ham and cheese. Alana, you’ve changed my life!

1 cup pancake mix (store-bought)

2 eggs

⅔ cup milk

1 teaspoon vanilla extract

2 cups mini chocolate chips

SPECIAL EQUIPMENT:

Sandwich grill

1. Preheat a nonstick sandwich grill to medium heat.

2. Place the pancake mix into a large bowl and add the eggs and the milk and whisk to combine.

3. Stir in the vanilla and pour some pancake batter into each of the 4 triangle-shaped spaces inside the preheated sandwich grill. Sprinkle a few chocolate chips in the middle.

4. Cover the chocolate chips with a little more batter. Close the griddle and cook until golden brown.

5. Serve and eat on the go.
