Slow Cooker Mexican-Style Spiced Pot Roast

Prepare dinner by just tossing everything into the slow cooker and get delicious Mexican spiced pot roast by evening. 

Preparation time: 15 minutes

Cooking time: 8 hours

Servings: 6

Ingredients:

2½ to 3 lbs. beef chuck roast, boneless

1 large onion, halved then sliced thinly

8 baby red potatoes

1 (1 oz.) pkg. taco seasoning mix

1 (14.5 oz) canned organic fire roasted chopped tomatoes, drained

2 tsp ground cumin

½ tsp ground red pepper (cayenne)

½ tsp pepper

½ tsp salt

Directions:

1. Grease a 5 qt slow cooker with cooking spray. Arrange the potatoes and onion in the slow cooker then place the beef on top. 

2. Sprinkle with taco seasoning mix, red pepper, cumin, pepper and salt. Pour tomatoes over the beef and veggies.

3. Cover the slow cooker then cook on low heat setting for 8 to 9 hours or until the beef becomes tender. Serve beef and veggies with sauce.
