Slow-Cooker Pork Burrito Bowls

This Mexican pork burrito bowls is easy to make because your slow cooker does everything!

Preparation time: 30 minutes

Cooking time: 6 hours

Servings: 8

Ingredients:

1 (3 lb) pork shoulder, boneless

1 large sweet onion, sliced

2 tbsp taco seasoning mix

1 (10 oz) canned red enchilada sauce

1 (4.5 oz) canned diced green chiles, drained

½ tsp salt

2 cups shredded lettuce

6 cups hot cooked white or brown rice

Salsa, chopped fresh cilantro, shredded Mexican cheese blend, if desired

Directions:

1. Grease a 5 qt slow cooker with cooking spray. Add onion.

2. Sprinkle taco seasoning mix over the pork shoulder then press to coat. Place the seasoned pork in the slow cooker then top with enchilada sauce.

3. Cover the slow cooker then cook on high heat setting for 5 to 6 hours or until tender. Remove the pork from the slow cooker then shred the meat with fork, throwing away any fat.

4. Pour the shredded pork into large bowl then strain the sauce. Add the chiles, 1 cup of strained sauce and salt then stir properly.

5. Spoon about ¾ cup of rice into 8 individual serving bowls then top each with about ½ cup of the pork mixture and ¼ cup of lettuce.

6. Garnish with cilantro, salsa or cheese.
