Enjoy the Mexican-style carne asada, slowly cooked and seasoned with spices, sweet onions and garlic.

Ingredients:
¼ cup extra-virgin olive oil
1 (2 lb) beef rump roast
1/3 cup lime juice
2 tbsp white vinegar
1 tsp ground cumin
1 tsp chili powder
1 tsp sweet Hungarian paprika
½ tsp ground cayenne pepper (ground red pepper)
Salt
Pepper to taste
3 garlic cloves, finely diced
1 sweet onion, chopped into chunks
Directions:
1. Whisk the lime juice, oil, paprika, vinegar, cumin, red pepper, chili powder, salt and pepper together in a small bowl.
2. Arrange the onion chunks in a 4 to 6 qt oval slow cooker. Place the beef on top then pour the lime juice mixture over the beef. Brush any remaining mixture all over the beef with a pastry brush. Sprinkle with garlic on top.
3. Cover the slow cooker then cook on low heat setting for 8 to 9 hours.
4. Take out the beef from the slow cooker then transfer to a large plate. Shred the beef with 2 forks then return it to the slow cooker. Stir properly with sauce. Serve hot.
