Ingredients:
For the carnitas:
1 tbsp vegetable oil
1 (3 lb) pork shoulder, boneless
1 large sweet onion, sliced
1 (1 oz) pkg. taco seasoning mix
1 (10 oz) canned red enchilada sauce
1 (4.5 oz) canned diced green chiles, drained
16 (6-inch) flour tortillas, for soft tacos and fajitas
Toppings (optional) :
1 cup shredded Cheddar cheese
½ cup fresh cilantro leaves
1 cup sour cream, if you like
Directions:
1. Grease a 5 qt slow cooker with cooking spray then add the onion slices.
2. Heat oil in a 10-inch nonstick skillet over high heat. Sprinkle the pork with taco seasoning mix then press to coat. Brown all the sides of the pork in oil then transfer to the slow cooker. Pour the enchilada sauce over the pork.
3 Cover the slow cooker then cook on high heat setting for 4 to 5 hours or until tender. Take out the pork from the slow cooker then shred the meat with a fork. Transfer the shredded pork to a large bowl then add the chiles, onions and 2 cups of the sauce from the slow cooker then stir properly.
4. Spoon the pork mixture onto each tortilla then top with desired toppings. Now roll up the tortillas.
