Cilantro-Lime Fillet Taco

Preparation time: 10 minutes

Cooking time: 4 hours

Servings: 6

Ingredients:

6 fish fillets, frozen (tilapia, salmon or cod)

1 (10 oz) canned Rotel, drained

½ tsp minced garlic

2 tbsp lime juice

1½ tbsp dried cilantro (or ¼ cup fresh chopped cilantro)

Salt to taste

Soft taco shells

Directions:

1. Place the frozen fillets in a slow cooker.

2. Top the fillets with Rotel, cilantro, garlic, lime juice, and salt.

3. Cover the slow cooker then cook on low heat setting for 4 hours. Use a fork to flake the fish then mix it with the other ingredients.

4. Spoon fish mixture into soft taco shells.
