Roasted Shrimp Taco

Servings: 6

Ingredients:

1-2 tbsp olive oil

11 oz. medium raw shrimp, frozen& then peeled

1 (14.5 oz) canned fire roasted stewed tomatoes (or diced)

½ cup diced bell pepper

2 tbsp of salsa, very spicy

Dash of sea salt

Dash of black pepper

½ tsp cumin

¼ - ½ tsp cayenne or chili pepper

½ tsp minced garlic

3-4 tbsp chopped cilantro, divided (the other half for garnishing)

Toppings (optional): chili pepper, avocado, feta, etc.

Directions:

1. Place the frozen shrimp in the slow cooker then drip in 1 tbsp of olive oil.

2. Add pepper and salt then mix with the shrimp. Drain the tomato juice then add the tomatoes and the remaining ingredients including the seasoning.

3. Mix everything together then cook on low heat setting for 3 to 4 hours or for 2 hours on high setting.

4. Garnish with 1 to 2 tbsp of cilantro and serve with tortillas, rice, and avocado.
