Slow Cooker Layered Rice-Veggie

Preparation time: 10 minutes

Cooking time: 3 hours

Servings: 2 to 4

Ingredients:

1 tbsp oil

2 cups cooked rice

½ cup finely chopped green bell pepper

½ cup peeled finely chopped carrots

½ cup finely chopped celery

½ cup finely chopped onion

15 oz. canned black beans, drained then rinsed

16 oz. canned refried beans

1 cup salsa

12 oz. shredded cheddar cheese.

Directions:

1. Sauté the veggies in oil in until tender.

2. In the meantime, combine the remaining ingredients except the cheese in a large bowl, then mix in the veggies until well combined.

3. In a greased or lined slow cooker, layer half of the mixture in it.

4. Now layer half of the cheese, then repeat the layers.

6. Finally, cover then cook on low heat setting for 2 to 3 hours.
