Ingredients:
1 tbsp oil
2 medium to large cherry tomatoes, halved
1 onion, halved then sliced thinly
3 peppers (red, green, yellow), sliced into strips
1 tsp smoked paprika
1tsp hot chili powder
½ tsp ground coriander
6 mini flour tortillas
Toppings (optional): fresh coriander, grated cheese, salsa, sour cream, avocado, etc.
Directions:
1. Combine oil, onion, peppers, smoked paprika, chili powder and ground coriander in a slow cooker then mix together. Cover and cook on high heat setting for about 1½ hours.
2. Next, add the tomatoes then cook for another 2 hours.
3. Serve mixture in tortillas then top with preferred toppings.
