Preparation time: 15 minutes
Cooking time: 8 hours 30 minutes
Servings: 4 to 6
Ingredients:
1 lb. ground beef
1 onion, thinly sliced
1 (15 oz.) canned tomato sauce
1 (7 oz.) canned chopped green chiles
2 garlic cloves, minced
2 (15 oz. each) canned black beans, drained
2 tbsp chili powder
1½ tsp cumin
12 oz. wheat ale
2 cups chicken broth
Pepper and salt, to taste
For garnish: Shredded sharp white cheddar cheese
Directions:
1. Combine onion, black beans, garlic, chili powder, green chilies and cumin in a 5 to 6 qt slow cooker. Put the ground beef over the veggies.
2. Pour in tomato sauce, chicken broth and wheat ale. Cover then cook on high heat setting for 6 hours or for 8 hours on low setting. Mash up the ground beef into bite size when it’s halfway through cooking time.
3. Add pepper and salt to taste then top with shredded cheese, sliced avocado, cilantro, chives or crumbled tortilla chips.
Note: If you leave the slow cooker unattended, mash up the beef when you are around and follow the manufacturer’s directions and cook on low setting.
