Slow Cooked Mexican Reddish Rice

Preparation time: 10 minutes

Cooking time: 5 hours

Servings: 6

Ingredients:

1 cup long grain rice, uncooked converted

5 bacon slices

1/8 tsp hot sauce

1 large onion, diced

2 (16 oz.) canned peeled and diced tomatoes, don’t drain

1 cup finely diced cooked ham

¼ tsp black pepper

½ tsp salt

Directions:

1. In a skillet, fry the bacon in skillet. Remove the bacon then crumble. Cook the onion in bacon drippings over medium high heat until it becomes tender.

2. Combine bacon, rice, onion, ham, tomatoes with juice and seasonings in a slow cooker.

3. Cover the slow cooker then cook on low setting for 6 to 8 hours or for 3 to 4 hours on high setting. Serve warm

Note: Add more hot sauce for hotter rice.
