Ingredients:
1 cup white rice
½ cup canned chopped tomatoes
1 cup chicken stock
1 cup tomato sauce
½ jalapeno, de-seeded and chopped
4 oz. canned chopped green chilies
¼ tsp pepper
½ tsp salt
1 tsp cumin
½ tsp dried oregano
½ tsp chili powder
For garnish: sliced limes and fresh cilantro
Directions:
1. Grease all the inside of a 2 to 3 qt slow cooker with non-stick cooking spray.
2. Pour the white rice, tomato sauce, chicken stock, chopped tomatoes with green chilies, jalapeno, chopped green chilies, cumin, pepper, oregano and salt into the slow cooker.
3. Cover and cook on high heat setting for 2½ hours or for 5 hours on low setting.
4. Garnish rice with lime wedges and fresh cilantro.
