Haystacks Mexican-Style

Preparation time: 15 minutes

Cooking time: 6 hours

Servings: 4

Ingredients:

2 large chicken breasts

4 oz cream cheese

½ cup sour cream

1 cup salsa

½ red onion, diced

1 (15.25 oz) canned black beans, rinsed

1 (4 oz.) canned chopped green chilies

1 cup frozen corn kernels

1½ tbsp homemade taco seasoning

1½ tbsp ranch mix

Cooked white rice

Green onion/cilantro

Tortilla chips

Shredded cheese

Directions:

1. In a slow cooker, combine the cream cheese, sour cream, salsa, red onion, green chilies, black beans, corn kernels, ranch mix and homemade taco seasoning. Add the chicken then cook on low setting for 4 to 6 hours or on high on high for 2 to 4 hours.

2. Take out the chicken then shred. Return the chicken to the slow cooker.

3. Serve chicken soup over rice then top with tortilla chips, olive, cilantro, green onion, or any desired toppings.
