Popular amongst tequila lovers, the Pepino is an underappreciated drink whose fruity bite is tempered only slightly by its tequila base. With pineapple, orange, and lime competing for attention in this medley of flavors, this cocktail will not leave your taste buds wanting. While not typically served with ice, it will take a slightly larger Pepino batch than usual to fill up a Mason jar, and you don’t want it getting warm on you!
Makes 1 serving.
1 oz simple syrup (page 162)
3 cilantro leaves
3 slices cucumber
2 oz silver tequila
1 oz orange liqueur
1 oz pineapple juice
1/2 lime (juiced)
Lime wedge (garnish)
Pineapple slice (optional garnish)
1. Add the simple syrup to a cocktail shaker and muddle the cilantro and cucumber slices inside.
2. Add the rest of the liquid ingredients along with some ice. Shake until thoroughly mixed.
3. Along with your desired amount of ice, strain the mixture into your Mason jar. Drop in a lime wedge or perhaps even pineapple wedge, and enjoy!
