Typically a Mojito is made with rum, but this is a play on the English Mojito variation, which calls for gin. The Strawberry Gin Mojito proves once again that gin can work with just about any fruit flavor, playing strawberry and lime off each other for a mix of flavors you won’t soon forget. It’s a beautiful, bright red cocktail that will draw everyone’s eye and certainly won’t leave them disappointed.
Makes 1 serving.
2 strawberries (hulled and sliced)
2 oz gin
1/2 oz simple syrup (page 162)
1/2 lime (juiced)
1 oz club soda
1 mint sprig (garnish)
1. Muddle the strawberries in the bottom of your Mason jar. Add ice.
2. Add the gin, simple syrup, and lime juice to a cocktail shaker filled with ice and shake vigorously.
3. Strain the shaker into your Mason jar and stir thoroughly. The juice from the strawberries should create a rich, red color.
4. Top with club soda and stir again. Garnish with a sprig of mint and enjoy!
VARIATION
If you find yourself wanting a stronger strawberry flavor, add more strawberries to the recipe. Likewise, if you want a stronger red color for presentation’s sake, a splash of grenadine would not go awry.
