Lychee and pink grapefruit salad

A light exotic-tasting fruit salad which can be assembled in just a few minutes from items you can pull out of the cupboard. Some research suggests that grapefruit helps lower cholesterol.I

Serves 4

400g tin lychees, drained

400g tin grapefruit in fruit juice, not syrup (pink grapefruit works best)

Seeds from 2 cardamom pods

1/2-1 tsp lime zest, ideally in fine strips

Put the grapefruit and its juice in a bowl along with the lychees (without their juice) and the cardamom seeds. To make the lime strips, dig the top edge of a potato peeler into the surface of the lime at an angle and scrape off a fine thread or twist of zest. It looks lovely strewn among the fruit. Alternatively, use a smaller quantity of finely grated zest. If time allows, cover the fruit and leave the flavours to merge for about 30 minutes.

Tip: Use fresh grapefruit when available, with unsweetened apple juice.
