Roasted peaches (or apricots)

1 tbsp coconut oil (or butter), plus extra for greasing

Handful of pistachios, roughly crushed or chopped

4 pitted dates, finely chopped

4 ripe peaches or 6 ripe apricots, halved and stones removed

Preheat the oven to 180°C. Grease a baking dish with coconut oil or butter. Mix the coconut oil, nuts and dates together in a bowl. Place the fruit halves in the baking dish cut side up and fill the stone cavities with the date and nut mixture. Pour 100ml water around the fruit and bake it for 20-30 minutes or until it starts to brown. Serve with 1 tbsp crème fraîche (adds 90 calories) or Greek yoghurt (adds 30 calories).
