Sweet and Sticky Beef

0.5 lb. flank steak

1 cup potato starch

Cooking oil, as needed

Beef marinade

1 small onion

2 cloves garlic

4-5 slices ginger, sliced

1 tablespoon light soy sauce

Sweet and sticky sauce

¾ cup honey
-
½ cup water

½ tablespoon rice vinegar

1 tablespoon hoisin sauce

¼ cup + 2 tablespoons light soy sauce

1 tablespoon Shaoxing cooking wine

1 tablespoon sesame oil

Cornstarch slurry

6 teaspoons water

5 teaspoons cornstarch
Instructions:
Add the onion, garlic, and ginger in a blender and puree. Add the soy sauce and cover the beef with the marinade. Leave it for up to an hour.
Coat the meat with half of the start and leave it for 15 minutes.
Heat a pan with one inch of oil and cook the meat in batches for two minutes.
Once done, deep fry again for a minute.
Remove the oil and add the sauce ingredients.
Stir until combined and bring to a low boil.
Mix the slurry ingredients and add them to the pan. Whisk until thickened.
Add the beef and toss to coat.
