1½ cups organic bran cereal (such as Nature’s Path Organic Smart Bran Cereal)
1⅓ cups milk
1 egg
2 T. oil
1¼ cups flour (I use a combination of whole wheat and oat flour and measure scant portions.)
1 T. baking powder
½ tsp. salt
2 T. sugar
½ cup raisins
Preheat the oven to 375°.
In a mixing bowl, combine the cereal and milk; let stand for 5 minutes. Add the egg and oil and beat well by hand. Add the flour, baking powder, salt, sugar, and raisins and mix by hand until the dry ingredients are moistened, but don’t overmix.
Spoon the batter into greased or paper-lined muffin cups and bake for 20 to 25 minutes. Cool in the tins for a few minutes before removing the muffins to a wire cooling rack.
Yields 12 to 16 muffins.
