Chocolate Banana Muffins

1½ cups whole wheat flour

1 tsp. baking soda

¼ tsp. salt

3 bananas

¼ cup honey

1 T. vanilla

1 T. oil

1 egg

½ cup plain Greek yogurt

1 T. milk

½ cup chocolate chips

Preheat the oven to 350°.

Grease 12 muffin cups (or use nonstick cooking spray).

In a large mixing bowl, combine the flour, baking soda, and salt.

In another bowl, beat together the bananas, honey, vanilla, oil, egg, yogurt, and milk until well combined and smooth (or use a blender). Add the dry ingredients to the wet ingredients and mix just until combined. Fold in the chocolate chips.

Spoon batter into the muffin cups and bake for 20 to 25 minutes or until a toothpick inserted into the middle of a muffin comes out clean. Cool muffins in the tin for 5 minutes and then remove them to a wire rack to cool completely.

Serves 12.
