Baked Apples with Walnuts and Raisins
4 baking apples (such as Granny Smith), cored
2 T. lemon juice
½ cup finely chopped walnuts
2 T. raisins
1 T. butter, melted and cooled slightly
2 T. brown sugar
1 tsp. cinnamon
1 cup hot water
Preheat the oven to 350°.
Peel the top third of each apple; core. Rub the exposed flesh of the apple with the lemon juice.
In a small mixing bowl, combine the walnuts, raisins, melted butter, brown sugar, and cinnamon. Place the prepared apples upright into a shallow casserole dish. Stuff the center of the apples with the walnut mixture.
Pour the hot water into the casserole dish (don’t pour directly onto the apples) and bake for about 1 hour or until the apples are tender.
Remove baked apples using a slotted spoon and serve them warm.
