3 T. cornstarch
4 T. sugar
2 ounces unsweetened chocolate
⅛ tsp. salt
2 cups milk, divided
1 tsp. vanilla
In a medium, heavy-bottom saucepan, place the cornstarch, sugar, chocolate, and salt. Add ¼ cup of the milk, and stir to mix.
In another saucepan, heat the remaining milk, and then slowly add it to the cornstarch mixture, stirring constantly. Cook on medium-low heat, stirring constantly, until the mixture thickens. Reduce the heat a bit and continue to cook for another few minutes.
Remove from heat and add the vanilla. Pour into a serving bowl (or use individual bowls).
Cover and refrigerate until chilled.
