Vanilla Pudding

3 T. cornstarch

4 T. sugar

⅛ tsp. salt

2 cups milk, divided

1 tsp. vanilla

In a medium, heavy-bottom saucepan, mix the cornstarch, sugar, and salt. Add ¼ cup of the milk and stir to mix.

In another saucepan, heat the remaining milk, and then slowly add it to the cornstarch mixture, stirring constantly. Cook on medium-low heat, stirring constantly, until the mixture thickens. Reduce the heat a bit and continue to cook for another few minutes.

Remove from heat and add the vanilla. Pour into a serving bowl (or use individual bowls), cover, and refrigerate until chilled.
